Green Sauce (Aji Verde)

Creamy, slightly spicy, garlicky, and a beautiful pale green, this sauce is so incredibly versatile – you’ll want to keep a jar in your fridge at all time!

We had been making this sauce for years before realizing that it was similar to the traditional Peruvian Aji Verde. It is easy to whip up and is good on meats, sandwiches, wraps, salads, you name it.

What You Need

  • Food processor
  • Jalapeños: seeds removed for less heat
  • Cilantro
  • Garlic
  • Mayonnaise
  • Sour cream
  • Lime juice
  • Salt/pepper
  • Olive oil

Let’s Make It!

Everything goes into the food processor — easy as that! Be sure to scrape down the sides so that everything gets evenly blended. I like the sauce on the smoother side, while my mother-in-law leaves it rather chunky. Jalapeño seeds can be removed or left in, depending on spiciness preference.

Storage

Store in a glass jar. Plastic will absorb the flavor, as well as canning jar lids.

Ingredients

2-3 jalapeños (seeds removed if desired)
1 cup cilantro leaves
2 cloves garlic
1/2 cup mayonnaise
1/3 cup sour cream
1 Tablespoon fresh lime juice
1/2 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons olive oil

Instructions

Pulse all ingredients in food processor until smooth.
