Spring Orzo Salad

I can’t get enough of this orzo salad! Summery, fresh, and perfect for lunch or dinner.

I love orzo. In my opinion, the texture is perfect. It is soft and chewy and pairs perfectly with so many things! In my current phase of trying to empty our pantry, I was pleasantly surprised to find an unopened box of orzo. The possibilities were endless, but the weather here has been warm and sunny, so a fresh salad felt right.

In other news, did you know that crayon shows up remarkably well on carpet? I had no idea until this morning, when my unattended toddler decided to bedeck our oatmeal-colored stair carpet with fuschia crayon. Good thing I have a healthy and satisfying lunch on hand with these orzo leftovers…

The veggies were what I happened to have on hand, with extra feta for creaminess. The black beans were a last-minute addition for extra protein and because my preschooler actually loves beans. Here you have it — a delightfully fresh orzo salad that can stand on its own or as a side.

What You Need

  • Orzo
  • Veggies
  • Beans
  • Feta
  • Extra lemon zest and juice
  • Dill sauce
How do you get crayon out of carpet?

Woolite and lots of scrubbing…

Ingredients

4 cups cooked orzo
1 pint cherry tomatoes, halved
4-5 mini bell peppers, diced
1/4 cup red onion, thinly sliced
1 ear of corn, cooked and cut off
1/2 can of black beans, rinsed
1/2 cucumber, diced
1 teaspoon lemon rind, grated on a rasp
1 Tablespoon juice
1 cup feta, crumbled
1/2 cup dill sauce

Combine ingredients.

Mix in dill sauce.
