Big Batch Restaurant-Style Salsa

Because sometimes you just want a consistent, basic, no-frills salsa on hand.

My husband looooooves chips and salsa. It has commonly been a staple in our kitchen. That being said, just any old salsa off the shelf will NOT do. He likes salsa at certain Mexican restaurants, as well as very very few jarred brands. This one passes the test!

What You Need

  • Food processor
  • Canned tomatoes (or home canned)
  • Rotel: I use a can of mild and a quarter to half can of hot. This can be adjusted based on personal spiciness preference.
  • Garlic and onion
  • A lot of cilantro
  • Half a lime
  • Salt, sugar, and cumin

Let’s Make It!

Since this recipe is big batch, the ingredients will not all fit into the food processor at once. I usually pulse the tomatoes first, pour them into a large bowl, then process the rest of the ingredients. Once that is blended very well, I add it to the tomatoes and stir to combine. Seasonings can be adjusted to taste.

Is this spicy?

This recipe is for a slightly over mild (mild-medium) level of spiciness. If you want it more or less spicy, adjust the Rotel.

Ingredients

28 ounce can whole peeled tomatoes with juice
1 can of original Rotel
1/2 can hot Rotel
1/4 cup chopped onion
1 clove chopped garlic
1/2 cup cilantro
juice from half of a fresh lime
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon cumin

Instructions

Pulse all ingredients in a food processor. (I have a large food processor and have to split the ingredients into two batches)
