Chocolate Chip Banana Bread

This freezer staple makes an excellent snack, breakfast, or gift, and can be made into muffins or bread. It is a moist quick bread, full of banana flavor!

Banana nut bread was a recipe that I grew up looking forward to whenever my mom made it! Her recipe had raisins and chopped nuts, a combination that I still enjoy today. My kids prefer chocolate chips, so that is what I posted in the recipe.

Mommy often made quick breads as gifts, wrapping them beautifully with decorative ribbon. Her attention to detail made for special, homemade gifts that were always appreciated. I of course took for granted all of the delicious homemade food and desserts that we had at home, something that I see repeated in my own preschooler 🙂 Even so, she likes to help bake and eat this recipe.

Bananas tend to ripen very quickly in our house, so I find myself gathering overripe bananas in the fridge to make this recipe quite frequently. It takes 4-5 ripe bananas, which results in a very moist bread. I have had numerous cakey banana breads before, but the texture of this remains my favorite.

I usually make the banana bread into small loaves or muffins, freezing at least half to pull out later for a special breakfast or gift. The bread is great topped with peanut butter for a slightly more balanced breakfast, or with this peanut butter frosting for kids to enjoy!

Ingredients

1/2 c butter (1 stick), room temperature
1 cup sugar
2 eggs
4-5 mashed ripe bananas (approx. 2 cups)
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips

Instructions

Cream the softened butter with the sugar.

Add eggs and beat until combined, scraping down the sides well.

Add mashed bananas and vanilla.

Combine flour, baking powder, baking soda, and salt. (Whisk together)

Add dry ingredients, mixing until combined.

Stir in chocolate chips (or other add-ins).

Grease and flour pans and bake at 350°F -one 9x5x3 loaf pan bakes for an hour (or until a toothpick comes out clean from the center) -three 6x3x2 (small) loaf pans bake for 40-45 minutes (until a toothpick comes out clean from the center) **place pans on a cookie sheet for easier transport in and out of the oven -24 muffins bake for 25 minutes (until a toothpick comes out clean from the center)
